Frozen whole zucchini?

I accidentally tossed 2 whole zucchini into the freezer. Hubby said they will turn toudh when thawed, but I'm thinking I can toss them into some homemade pasta sauce. Any other thoughts on how yo salvage these?

    They will turn into mush when thawed, except not so much for the skins. You can toss them into tomato sauce, or anything else, and they will add no texture, except for the skins, but neither will they have lost much nutritional value.

    I'm no expert, though.

    I would try making them into a soup. Saute some onion, throw in some diced potato for some body the zucchini, chicken or veggie stock and when cooked some light cream or a dollop of Greek yogurt puree first. You cook also add a little parmesan at the end or put a little curry powder in when cooking the onions instead. Worth a try so you don't waste them.

    Use it in spaghetti sauce, soups and stews and it should do okay in stir fry. I used to freeze gallons of summer squash and zucchini every year for winter meas and it was fine for cooking with.
