Meal for one

Hi, I am on my own for a month. Any low calorie recipes for meals for one? Preferably simple/ easy for my late shifts.

    Hi:
    I found that most recipes are created for 4-8 portions. I cooked one meal on Sunday afternoon. after pot cools down, I separate the 4-8 portions into Snapware glass containers. Then, I have my single portion.

    Hi,
    A staple for me is making daal or a lentil stew for 2 one night for dinner with brown rice and using the second portion for lunch the next day. I do this for most meals but another great option is a high protein salad for dinner all in one bowl ex: taco salad with lettuce tomato peppers black beans shredded cheese avocado salsa and some tortilla chips. Also making a big meal on the weekend and freezing it for the week is a great option like a corn chowder or chili pot.

    I freeze my meat in portions so that I can make just what I need.

    The grocery stores here are pretty nice. If you want just one carrot, they'll sell you just one carrot - that kind of thing. You could ask at yours. You can also buy veggies frozen.

    Cooking for one is a little different. You can't just cut recipes in half or in quarters because the flavorings change when you do that. It's best to figure out how you like things through trial and error, IMO. I usually make enough for two and have leftovers, but still, not many cookbooks to feed one or two people.

    Work at it, you'll get there.

    Grill/bake/poach/sear a steak/chop/filet, saute or roast a single portion of vegetables, put all on a plate.

    If I'm flying solo for a while, I'll for cook 4, eat one serving that day, have another serving for lunch or dinner the next day, and freeze the other two servings for a meal the during each of the following two weeks, so I dont get tired of eating the same thing 4 times in a row.

    I always cook for just me, so when I make larger meals (soups, stews etc) I make several portions and eat it through-out the week (but I don't mind eating the same things over and over for a while). The count might not be completely accurate per day either (as I just take the whole calorie count and divide by number of meals) but it will be accurate over the week - so if you do freeze and eat at a later day, you may be a little bit off too.

    That's a hazard of living alone, always left overs. :) I like the freezer idea but have found that some meals do not taste as good after being the freezer. It is a challenge.
