Zucchini Pizzas....!!!

So when I came home from work today wondering what to make for dinner this popped up on my Facebook wall.
Ingredients
Zucchini
Olive Oil
Garlic Powder
Petite Tomatoes sliced
Shredded Mozzarella Cheese
Parmesan Cheese
Salt/Pepper
Directions:
Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.
I just happened to have most of the ingredients on hand and with some modifications went ahead and made it.
I substituted summer squash for the zucchini and added some sliced eggplant. Used minced fresh garlic, fresh basil from the herb garden and a little dried oregano, salt and pepper. Instead of long slices like in the pic I cut the veggies into thin slices and layered into a casserole dish with the cheese on top.
This was awesome!!! It really does scratch the pizza itch. It would be be even better with some mushrooms and maybe slices of pepperoni or some browned and seasoned ground beef. Will definitely be making it again.

If you look up zucchini boats you'll find a lot of variations. I love enchilada or taco stuffed boats.0
