I found the recipe on skinny taste. I added bacon...because it's amazing!0

Her zucchini enchiladas are so good. I add onion, peppers, spinach, and sometimes beans or chicken, but the zucchini combined with cheese makes such an awesome sauce. I roll them and freeze them seam side down on a metal baking sheet and transfer to a freezer bag for easy frozen burritos. Any fillings work - including breakfast burritos.0

Just omit the bacon! I like a 2% mexi blend or a smaller amount of full fat extra sharp or pepper jack.0 -
