Pressure cooking easy meals

Would like to know if any of you pressure cook full meals. My typical easy meal takes 5 minutes to cook, once the pressure cooker gets up to pressure.
Here's my meal:
*One chicken tender- approx 2 oz. Sometimes 2. It just depends on me.
*6-8 baby brussel sprouts.
*1-carrot peeled and sliced legthwise. (Depending on how big, I'll slice it lengthwise in half, then slice again in half lengthwise. About the size of a finger.)
*1-2oz baby potato, red or white or purple. Cut in half.

Sometimes to this meal I'll add 3-4 whole unpeeled eggs. And a wedge of cabbage about 1/2" thick.
Sometimes I'll cut in half and core 1 apple. Sprinkle with cinnamon, and coconut palm sugar.. I just add all this in the same pot with everything.
Salt and pepper or season as desired. Put 1-2 cups water in pressure cooker. Place rack in the bottom of cooker, and put all ingredients in cooker on top of the rack. I have a rocker top cooker, so I bring it to a full rock, set timer for 5 minutes at a full rock, then do the quick cool down method, and it's done.
*NOTE: I use frozen chicken tenders. If you use a whole frozen chicken breast, I would cook it for 5 minutes in pressure cooker, do a quick cool down, then add other ingredients and cook for 5 minutes. The apple will basically peel itself while cooking too.

... .. after it's done, I plate it, add cottage cheese, tomato, cucumber or whatever. Easy, and one pan gets dirty.

    I always make hard boiled eggs in my pressure cooker. I add 1-2 cups water, and put my eggs on the rack. Bring it to a full rock, and time for 5 minutes. Use the quick cool method, and the eggs are perfectly cooked everytime. So easy to peel too. I eat a lot of egg whites, so this is how I do it.

    I have an entire cookbook for my pressure cooker, but have yet to really embrace it. I plan to remedy that soon! :)
