Healthy/ easy way to prepare chicken thighs?

Just wondering if anyone had any easy, low-cal favorite recipes for preparing chicken thighs. I think they are more flavorful than chicken breast for not many more calories, but have just been baking them and not doing anything exciting.

Chicken thighs are my favorite thing to cook in a crock pot! I buy like 5 lbs at a time. Add salsa for southwest flavor, a can of tomatoes and some garlic and Italian spices for italian, or peppers, onions, and a can of fat free cream if mushroom soup for a nummy comfort dish. I like to cook all day on low, then debone and put in the fridge over night. Next day, remove any fat that solidifies on the top, and you've got lean, moist, and satisfying chicken that's ready to eat as is, or great for sandwiches, salads, tacos, quick stir fry veggies, etc.0

This time of year I marinate chicken thighs in a little salad dressing and grill them.
Thighs are great in crock pot recipes. You could browse allrecipes.com or get a slow-cooker cookbook from your library. Also check out the slow cooker recipes on the MFP blog - you can click a button to log them

Here's my favorite crock pot cookbook, but I wouldn't characterize it as easy - the author loves spices that need to be ground and other prep work before you toss everything in:

Marinate with plain yoghurt and lots of garlic, then broil or grill0

I marinate my thighs in a Baggie with:
Juice of one lime
Chopped onion and garlic
1/4 cup olive oil
1/4 cup water
2 tblsp tomato paste
2 tblsp Dijon mustard
1 tblsp siracha sauce
Salt/pepper
Blend all in bag-add thighs and mush everything till coated well.
Put in fridge for at least 3 hours (you can start the day before also).
Bake in a 350' oven for an hour.
You could probably put it in a crockpot all day if you prefer.

I put the McCormick BBQ sprinkle on mine and bake it.0

Bake with olive oil, salt and pepper. Broil for the last 5 mins to crisp up the skin because it's delicious and worth the extra few cals.0

Pull off skin. sprinkle with poultry seasoning mix and some paprika. Bake about an hour with tinfoil over top to prevent drying. Serve with rice, sauteed mushrooms, and whatever veggie you like. Or if you don't like mushrooms, onions and peppers are nice.0
