Chai Latte Overnight Oats

I have been experimenting with overnight oats flavours lately, and I've discovered I am not a huge fan of the typical fruit and yogurt recipes that seem to be so popular. This recipe was perfect for my post-gym breakfast! They were so yummy and gooey and packed with protein. I used a decaf chai tea bag, but you can absolutely use a regular one for a caffeine kick. ;) This is so easy to throw together the night before, and grab out of the fridge on your way to work/the gym/life. My version came in at roughly 400 calories.

Chai Latte Overnight Oats

Ingredients

1 chai tea bag
1 cup of unsweetened almond milk
1/2 cup of rolled oats (NOT minute or quick oats!)
1 tbsp of chia seeds
1/2 scoop of vanilla protein powder (or more if you need it!)
1 tbsp of honey
1/2 tsp of cinnamon

Directions

The Night Before
1) Bring the almond milk to a simmer, drop in the tea bag, cover it, and remove it from the heat. Let it steep for about 5-10 minutes. (Depending on how strong you like the flavour.)
2) Remove the tea bag and allow the milk to cool completely.
3) In a mason jar or seal-able container, mix the oats, chia seeds, and protein powder.
4) Pour in the almond milk and stir to combine.
5) Seal it up and throw it in the fridge!

The Next Morning
6) Stir in the honey and cinnamon and enjoy!

    I like the fruity, but yours sounds great, too.

    I put a couple tablespoons of frozen fruit or jam on the bottom. This month it's been home-made applesauce, rhubarb jam, or blueberries. I spoon 3/4 cup regular yogurt (not Greek) on top, then lightly stir (not disturbing the bottom) 1/3 cup oatmeal. I top with any nuts or seeds that strike my fancy that day. It might be a tablespoon of sunflower seeds, walnuts, shaved almonds, or pumpkin seeds. I seal it up and refrigerate overnight.

    Some of the recipes I find too heavy with the oatmeal or watery. This proportion is for me a satisfying creaminess.
