Pork Loin Broth

I had some broth left over from when I cooked a pork loin in a crock pot. I cooked it without adding anything. It was about 2 cups. I can not find the calories for 2 cups of pork loin broth. Does anyone know what the calories are ?

    Did you count the calories for the meat?
    If so, you have already counted whatever calories are in the water.

    So I would count the calories of 4 oz. of meat for one cup of broth?

    I've been trying to figure this out for quite a while and I think the reason it's hard to get a straight answer is that nobody knows. Pork loin is pretty lean but, if you get a family pack of up bone-in pork loin slices and simmer that for 8 hours or so you're going to get a pork stock with collagen from the bones and connective tissue, plus a little marrow, plus most of that fat from the edges of the meat will break down. On top of that, with most long simmers and braises you get a fair bit of reduction, less with a crock pot but still, it concentrates the stock and increases the calories per weight and volume. RodaRose is probably right that if you counted the calories for the whole loin to start with you don't have to add them again. That's helpful if you're making a sauce or gravy to be served with the meat it came from. Not as helpful, though, if you reserve it for pea soup later in the week.

    Now, what if you started with the shoulder instead of a loin? The same problem, but exponentially increased.

    So I don't have the answer; wish I did, but I've tried to focus the question.

    I should have added that your leftover liquid, after simmering that meat, is delicious, nutritious and sinful to waste. Especially if the waste is only because we can't figure out how many calories are in it.

    It is also a cornerstone of every culinary tradition since man learned to build a fire.

    No. <3 I would not count the broth at all.
    If you already counted the 4 oz of meat you do not have to count any of the broth -- esp because the 4 oz is a small amount of meat.

    What I did is I put the pork loin broth in my rice for Spanish rice...mmmmm good. There was only ground up turkey meat that I browned in it with veggies. :blush:
