calorie restriction is the heart of the diabetic diet! I've never seen anyone successfully lower A1C or fasting glucose without actively restricting calories regardless of diet composition. Also, we all know the GI has notorious errors including if you eat a piece of burnt bread it would be lower in the measured GI.

Evidence ? The one reference achieved a paltry reduction "hemoglobin A1c level (−0.36%)" over 4 years by using an intervention with free meal replacement shakes etc. Or perhaps http://archinte.jamanetwork.com/article.aspx?articleid=226013 wasn't the evidence you were intending.0 -

We also know that bread is high in carbohydrate and GI and non-starchy vegetables are low in carbohydrate and GI. So there's very little chance of bread ever being better for blood glucose than non-starchy vegetables.
