I made a quick lentil stew -- simmered some dry lentils in chicken stock with minced garlic, diced onion, white pepper, cumin, and chili powder, then added a can of stewed tomatoes at the end and finished with 2Tbsp lemon juice. My son had it with leftover homemade meatballs and a side of broccoli-and-carrot "slaw;" I haven't had anything with it yet (it was very filling) but I've pre-logged some leftover grilled chicken, green beans, and pesto to make myself a "salad" if I'm hungry before bed.
Um, basically I throw stuff in a pot and/or use up leftovers, with copious vegetable usage to round things out. I work 12 hours a day and try to work out one 1-2 times per day, I am way too lazy to do any fancy cookin' most nights!0
