Anyone have any recipes to share? I really enjoy cooking and want to make something with lots of flavor that's still low carb. Meals can be for any meal of the day.
Thanks!

Ha! I have wanted to post this so many times.
Seriously though, OP, there are tons of websites with tons of recipes out there. Pinterest is also a good resource.0 -
I batch cook, portion and freeze so that I can have quick meals at any time. Some of my favorites:
-We love to make chili of any sort. Some of my favorites are just a regular ground turkey chili with plenty of peppers, onions, etc and I sub chopped zucchini for the beans, add sazon, and add a can of pureed pumpkin. Other Chili recipes I really like are:

-Soup is my go to. I like:
http://againstallgrain.com/2013/01/30/leftover-roast-chicken-soup-with-roasted-vegetables/ (I do the double butternut and no sweet potato)
http://www.skinnytaste.com/2009/11/crock-pot-minestrone-soup.html (I don’t even add the pasta, but if you do, don’t add the cooked pasta until you’re eating it)
http://www.skinnytaste.com/2011/12/crock-pot-chicken-enchilada-soup.html (I use zucchini instead of beans)
http://abc.go.com/shows/the-chew/recipes/michael-symon-tomato-blue-cheese-soup (I swap evaporated skim milk for the cream)
http://www.skinnytaste.com/2011/02/baked-potato-soup.html (can swap cauliflower for all potato)

Other “stews” we like are:

http://www.skinnytaste.com/2014/03/crock-pot-carne-guisada-latin-beef-stew.html (swap radishes for potato)
We also freeze things like:
Stuffed peppers – this is my favorite: http://www.slenderkitchen.com/cheesy-enchilada-turkey-stuffed-peppers/
Variations on meatballs like: (we remove breadcrumbs)
http://www.skinnytaste.com/2015/01/buffalo-chicken-meatballs.html
http://www.skinnytaste.com/2010/01/asian-turkey-meatballs-with-lime-sesame.html
http://www.superhealthykids.com/pesto-chicken-veggie-meatballs/ - contains no breadcrumbs!
http://www.skinnytaste.com/2015/07/eggplant-meatballs.html
For breakfasts, my favorites are:
Egg white/egg crustless quiche in all different variations (we love BLT or cabbage/bacon)
http://www.skinnytaste.com/2014/12/sausage-cheese-and-veggie-egg-bake.html
http://www.slenderkitchen.com/?s=quiche+cupcake
All of them can be portioned and frozen, but I prefer to keep them in the fridge for the week because the texture of eggs can change a bit.
