Spinach Artichoke Chicken
Found this recipe and I had to share

Only difference is that I used the garlic and herb swiss from laughing cow and I used fresh spinach instead of frozen. This was seriously SO good.

I just went to the store and got everything I needed to make this tonight. I entered everything in the recipe builder and it came up to 180 calories per serving and 30 grams of protein. Here's my recipe and portions I used to come up with the calorie content. I am getting ready to make it, so I will tweak it if it looks like its going to be more or less depending on how the serving size comes out.
Servings : 6
2 lbs thinly sliced boneless skinless chicken breast
6 wedges laughing cow cheese original swiss
2 cups chopped spinach
1 can artichoke hearts, drained
180 calories/ 30 grams protein per serving

Just wanted to say that this was fantastic. I bought the thin sliced chicken breast, so it was very easy to put the spinach mixture in and secure it with the toothpick. I also sprinkled some Mozzarella cheese on top when it was done. It was so easy and fast. My husband and the kids loved it too. This is going on our rotation from now on. Going to try it with pork tenderloin too.0

The chicken I used totaled almost 2 lbs and I had 6 pieces, so they were about 5 oz. a piece. Not a bad portion size with the spinach mixture included. We had it with saffron rice and green beans. It was really good. The kids and I shared the last one for a snack just now and it was so good. Can't wait to have it again.
I used 6 laughing cow wedges, about 1 cup of spinach and finely chopped two big artichoke hearts for the mixture.

Yeah...I guess 5 0z, is around 150-160, plus the cheese. You didn't count the spinach?0 -
yes, I counted the spinach too. I put my recipe in the recipe builder and this is how it totaled for me on my food diary for one portion.

I didn't count the mozzarella I sprinkled on top. That was a last minute thing just to make it even better. It didn't need it, but I love cheese!
ETA: If you use frozen chopped spinach, don't forget to get the water out of it. I always thaw it in the microwave, then put it in a clean kitchen towel and squeeze the excess water out of it.
