I'm in the process of losing weight, and I want to start excluding rice and substitute it with eggs instead (breakfast).

Is it okay to eat omelet every morning? I will use cooking spray, I will be putting ingredients such as ham, onions and other veggies like tomato.

Also, is using egg beaters (egg whites) for omelet okay? Or should I try to use normal eggs?

Use what you want. Just weigh all your ingredients and use the appropriate entries, and make sure everything you want/need fits into your daily calorie goal. Egg whites are fine, regular eggs are fine.

Just as long as your are honest with the calories and can make it through the day without going over your calories, it's all gravy

And do you all use the beaters? Or normal eggs?

I eat an omelet for breakfast most days -- with 2 whole eggs, vegetables (usually broccoli, zucchini, or asparagus plus some kind of green like spinach or kale), and feta cheese. Sometimes mushrooms or onion too.

It doesn't really matter if you have the same thing a lot if you are happy with it. I tend to like having basically the same breakfast (I often have different things with it, like smoked salmon or fruit or cottage cheese for variety), as it makes morning easy. I get more variety at my other meals.

Do you like it and does it fit in your daily calories and other goals? Then it is good. If you do not like it or it doesn't fit your calories/goals then it isn't so good. Personally I suck at making omelets. I like them but I have very little success in making them so I don't eat them often - but scrambled eggs with veggies I'm a pro at. Enjoy your omelets.

and eggbeaters or normal eggs doesn't matter. I like the Southwestern egg beaters - or the plain kind that include the yolk (vs the ones that are just the whites).

I imagine the reason behind the creation of Egg Beaters was to reduce fat by eliminating yokes, and now that we know fat is not the enemy, it's fine to use whole eggs.

Along those lines, it's fine for most people to have eggs every day: http://authoritynutrition.com/how-many-eggs-should-you-eat/

I use eggbeaters nearly every day for breakfast. Half the calories of eggs. I make omlets mostly to hold the fillings together! The Southwestern one is good, so is the cheese and chive. If whole eggs fit your macros use those. The calories I save using eggbeaters, I use up elsewhere in my day. The only issue I have with them is the sodium content. It's fine for me, but an concern for my husband.

The research now says it's supposed to be fine.

I do have a family history of high cholesterol, but I only developed a problem recently. I've been eating 2-3 eggs every day for a couple of years. It might have nothing to do with it, who knows, but I'm trying to cut back a bit just in case.

1 whole egg with a couple of egg whites gives you more protein with a bit fewer cals than you'd get with 2 eggs, and little less saturated fat. I thought it might not taste the greatest, but it's fine.
