Can anyone tell me why a pork chop grilled with bone in has 257 calories versus one grilled which only has 126 calories?

If you can't find a reliable USDA entry that matches your package label you'll have to make one for yourself.
The entries are user input and you'll find a lot of inaccuracies and silly stuff. You'll have to look it up and see if an entry matches what you have I'm afraid.0 -
Any entry for one chop is a bad entry, that's why.

Weigh it, cook it, eat it, weigh what's left, subtract. Yeah, the left over bone and fat will lose a little bit of weight during cooking, but it's probably more accurate than guessing and will also result in a slight over-estimate, which is better than under estimating.0
