Easy (and tasty) Vegetarian Tacos!

1/2 cup Fat Free Shredded Cheese (I use Albertson's store brand)
2 tbs Medium Salsa (Also store brand)
1 cup Cole Slaw (just veggies) or shredded cabbage
6 Corn Tortillas
3 Egg White
1/2 cup Fat Free Refried Beans

Toast corn tortilla's under broiler a few minutes on each side, so they are still soft but starting to "dry". (You don't want them hard like a tostada..... well unless you do.) Spread the refried beans on top of the 6 tortillas and top with cheese. Broil again until cheese melts. Scramble the egg whites with the salsa and top the tortillas with the eggs and the coleslaw/shredded cabbage. Eat! Enjoy! A HUGE plate is only 539 calories using the brands I use :)

Totals: 539 cal 84g carb 6g fat 37g protein
