Drinks all around!
Here are just a few cocktail ideas for those of us who like to drink and still maintain our calorie intake goals.
I found a great sub for a pina colada type drink on the EverydayMaven food blog and changed it up a bit to get get more for less, it goes like this...
1/4c. orange pineapple juice
1/4c. coconut water
1 oz(shot) of coconut rum
Sparkling Water or Club Soda
Fill a tall glass with ice, add the juice, rum and coconut water, top off with club soda or sparkling water. Sometimes I make it in a short glass instead or double the main ingredients, depends on the day Also great with an added wedge of lemon, lime or kiwi squeezed in.
I have found as well that just about any juice(100% no sugar added) with some sparkling water or club soda and a shot of vodka or gin if you choose makes for a pretty tasty low cal drink.
Another one of my favorites, when I'm more in the mood for a beer than a cocktail is a red beer, I have a lot of different recipes but two that I think should be shared. I like them because they are filling and offer the added nutritional benefits of the tomato juice and veg. Also I like these recipes because I can use them with Non Alcoholic beer and I can't tell the difference, except in the fact that I tend to make better choices all around when I haven't been drinking
For a Chilada type red beer try this...
1 c. Clamato Tomato juice cocktail
a dash or two of Tabasco
a dash or 2 of Lea and Perrins or any other Worcestershire sauce
1/4 of a fresh lime squeezed and thrown in the drink
lime salt if desired
Beer of choice, light, N/A, whatever you prefer
I also make a more Bloody Mary based red beer and I make the mix in quantity so I can just come in, pour in some mixer, add beer(same as before-artisan, light, N/A, your choice) and go out on the deck for a bit of r&r. Also I'm a pickle addict so I always add a thin stalk of celery, a few tart pickled onions and peperocini to each one. I usually have one of these made while I'm making dinner as I tend to munch on the veg in the drink rather than taste the food at every turn. Here's the recipe, dilute with beer to taste. Also good with vodka of course. To lighten it up even more, dilute with a mix of beer and sparkling water or club soda to taste.

1/3 c. Worcestershire sauce
1 1/2 tsp each Tabasco and black pepper
3/4 tsp celery salt
2 TBS Horseradish

Veg- Cocktail onions, pepperocini, celery stick
