Baked Scotch Egg
Eggs are one of my favorite foods, so I wanted to try to recreate this protein-packed pub treat.
Ingredients:
1. Dip the hard boiled egg in the Egg Beaters
2. Cover the hard boiled egg with the ground beef
3. Dip meat-covered egg in Egg Beaters again
4. Roll in bread crumbs to cover the surface
5. Bake for 30 minutes at 400F
6. Serve with mustard

- 1 hard boiled egg
- 3 oz ground beef (I used 80/20)
- 1 tbsp Egg Beaters
- 2 tbsp bread crumbs (I used Italian seasoned)
- 1 tbsp mustard

Things I would change next time:
- Use leaner beef to lower the calorie and fat content
- Season the beef to add flavor
- Serve with a mustard-based sauce rather than just straight mustard, maybe honey mustard
