Frozen Vegetarian Egg Sandwiches - High Protien / Low Calorie

I just made these, they freeze beautifully and are so good! You can swap the egg whites for regular eggs, I just like the consistency of egg whites when you microwave them, and I like my yolks runny ; )

For 6 Sandwiches

1 package Thomas's Multigrain Lite English Muffins
1 package Maple flavored veggie sausage patties
6 slices 2% milk reduced fat american cheese
1 container liquid egg whites

For the eggs, I divided the container into 6 portions, and microwaved in a mini tupperware container for a minute each to get a patty that would fit the muffins. You can fry the eggs as well, but this yields an egg patty the perfect size.

I just lightly toasted the English muffins, put half a piece of cheese on each slice, cut the sausage patties in half ( so you have two thin rounds) and put half a round on each slice, the egg patty in the middle, closed and froze!

To heat them up, you can throw them in the toaster oven or microwave. Super delicious with sriracha or sriracha ketchup :)
