Question about weighing food

So I weigh all of my foods but I also cook a lot, which makes it a little harder to figure out calories. I'll explain: if I put a recipe on my recipe book and then log it, MFP calculates "servings" based on the recipe but then I don't have the weight of each serving to measure it. Tonight I'm making this baked chicken recipe and MFP calculated each serving as "two drumsticks" but we know the weigh varies from piece to piece. How do you get around this? Just overestimate and log it? Any tips are appreciated!

Another thing that helps me, is I keep a list of the weights (grams) off all my bowls and pots and pans. That way I can put the entire pot on the scale and subtract the pot weight. Then i know how many grams are in the entire recipe. Then just enter grams that you consume. I taped my list to the back of my cupboard door. Made life sooooo much easier.
