Diabetes is kicking my butt!

I'm happy and motivated but can't seem to get and stay well. I'm eating like a saint never exceeding calories or carbs, almost vegan with a pound of vegetables daily but a burger every night and have lost 15 pounds in 40 days. HOWEVER I keep getting upper respiratory infections and urinary tract infections (this one has been doing on 12 days). I used up all my vacation and sick time. My boss knows I am sick, has had UTIs and is probably diabetic herself but put me on leave restrictions meaning I'm supposed to go to the Dr's office for a diagnosis every time I am out, must call her at least twice between 0700-0830 and can't just call or email when I realize that I am too sick to return to work, etc; when sick leave is designed for leave abusers who stay out for three days with a stubbed toe. I've been to a doctors appointment 7 times in the past 42 days. (some 3 in one day) She's really controlling about everything else too. Any advice about retaining health and dealing with a inequitible controller? My plan is to ask to be reassigned or her reassigned.
