Or good old mashed potatoes. I love sauteed cubed Yukon golds in the pan too. Or baked fries (I use Yukon golds for those just fine as well).0 -

The vast majority of her potato recipes are awesome, but they use a lot of oil. Crash hot potatoes is a favorite of mine when I'm not counting calories.0 -

There was a recipe in the Weight Watchers magazine I think it was last month. I cut it out and have made it atleast half a dozen times since then.
Take as many potatoes as you need for the aunt of people you are cooking for, so 1 potato =1 serving. Wash, pierce and boil until tender. (For me it seems like an hour or so). Heat oven to 400 and drain potatoes. Spray cookie sheet with nonstick spray and place potatoes on pan. Using a glass cup, smash potatoes, spray each potato with nonstick spray, or drizzle with oil, season with salt, pepper and minced garlic, bake until crisp or brown on top. I think it's roughly 10 min. (Thats an estimate because i throw them in the last few minutes of broiling my meat.) Sometimes I put half a tablespoon of stick butter on them when they come out.

For new potatoes, we always cooked them with fresh green beans, a little onion, and some bacon or boiling ham. Man that sounds good right now.0
