breakfast....

I see a lot of these up here but I'm tired of oatmeal and I have a question about eggs?

About how many eggs is safe to consume in a week? The research varies. I saw one site say about 1 egg a day is ok. What are your thoughts?

Also, what in the world is there to eat (and filing and long lasting?) for breakfast besides eggs and oatmeal? I'd like something with a salty taste. Not to big on sweets lately.

    It really depends on whether you have any health concerns. Recent research is suggesting that eggs and fat are not the devil (and eating cholesterol doesn't necessarily cause high cholesterol), so an appropriate amount of eggs to consume is as many as you want that fit within your calorie and macro nutrient targets.

    With breakfasts, could you make your own breakfast sandwiches with bacon/eggs/avocado/cheese and an English muffin/bagel thin/whole wheat toast? Would plain Greek yogurt work (I've recently begun putting Greek yogurt into my oatmeal for more protein)? Eggs baked in an avocado? Deli meats and cheese with a piece of fruit?

    Bacon, toast, yogurts, you could use left over chicken and make a chicken and egg wrap with cheese, cold cereals, bagels

    I love eggs and avacado together. It's my typical breakfast. Good, because eggs and avacodo are my favorite. Maybe I'll do a breakfast burrito today! Yum! I Jay didn't want the egg guilt lol

    Try egg whites--less fat, pretty much the same protein. Great in egg sandwiches.

    You can eat anything for breakfast- traditional breakfast foods aren't the only choice.

    I alternate between 2 things each week for work. My go-to's are:

    Overnight Oats
    Egg Muffins
    Waffles & Sausage links/patties
    Greek yogurt + granola

    Honestly I've found just searching for recipes to be the most helpful. Hop over to Google, enter in a few ingredients that sound yummy, hit search and see what you find!

    I eat as many eggs a week as I want. They pack a lot of protein in a little package.

    This weekend I have a lot of garden produce to use up so I made a zucchini and sausage strata with lots of onion from my garden.

    Eggs are amazingly healthy for you. Look at it this way -- within them contains everything that's needed to create life (provided that they are fertilized, but that's besides the point). How could that possibly be bad for you? Personally, I usually eat 3-4 a day.

    I often eat 4 a day! Always for breakfast and hard boiled for lunch at least 2-3 times a week.

    I love to have an egg over a cup of steamed baby kale with a splash of balsamic vinegar for breakfast. Yummy and filling!

    Thank you all so much! All these options sound great. I'm glad I can get over my egg guilt lol. @jgnatca That looks delicious! I'm a big fan of zuccini. And funny you should mention rye toast. I just bought some rye bread the other day!

    @TinyTexn59 I'm going to have to try that!

    I'll invest in egg whites and Greek yogurt too. I can get bored with the same breakfast foods everyday.

    Great! Eggs can be served in dozens of ways. Crustless quiche. Omelet. Hard boiled for an afternoon snack. Half and half with the egg whites for a light scramble. Make protein pancakes and serve with Greek yogurt and fruit.

    For a different breakfast, how about raisin pudding?

    You can eat anything you want for any meal. Eat dinner stuff (leftovers?) for breakfast if it suits you better than oatmeal!

    I don't limit eggs at all. I'm usually rushing in the morning so I'll grab a hard boiled egg, and microwave some turkey sausage or bacon to go with. Some days it's cottage cheese or yogurt with fruit.

    What about a piece of whole grain bread with a little peanut butter and some banana slices?

    The peanut butter banana thing would be a great quick breakfast for me @cnbbnc. I might have to add a protein shake to last until lunch. But, I can definitely see myself doing this on days I have an early shift!

    I eat a lot of eggs, probably around 2-3 per day on a normal day, not including what I use to cook with. For breakfast, I love english muffins with a bit of butter, an egg and either a slice of ham or turkey bacon. Sometimes I'll do greek yogurt with add ins or oatmeal with add ins- usually fruit and nuts for a salty/sweet thing. Hardboiled eggs are so yum, just add fruit/veggies to round it out a bit. A 'grilled' PB and banana or PBJ is a good, quick one that has a salty flavor to it too, but I'm not a huge PB fan so I have to be in the mood for that.

    I'm pretty big on non-breakfast foods for breakfast hah! So leftovers are good (grilled veggies with an egg thrown in, etc), or sometimes I'll wait/get busy and have lunch as my first meal, then dinner, then 'dessert' as a small meal. Depends on my mood.

    Totally agree. I do a lot of omlettes or breakfast sandwiches as I prefer savory too. Breakfast meats have tons of sodium but canadian bacon on an English muffin is always tasty. Would be killer with some avocado, roasted red pepper and spinach, with or without egg. Just gotta keep trying new combos!

    I also like good old raisin bran. And I second the peanut butter toast.

    I would follow a doctor's advice on this one, but if you don't already have a cholesterol problem, I wouldn't worry too much. I have been eating on average around 6-7 eggs a week, yolks and all, for the past year, and on my last bloodwork my 'bad' cholesterol actually went down.

    I will typically have eggs boiled (2) with some cold cereal or oatmeal, and a piece of fruit for breakfast. Once a week I will usually have an egg mcmuffin or similar fast-food breakfast sandwich as well. If I don't have eggs, I usually will choose cottage cheese with the same cold cereal, oatmeal, or other hot cereal. Occasionally I might have a greek yogurt, but find this doesn't fill me up the same as cottage cheese or eggs do.

    At Costco in the frozen foods section they carry boxes of 12 frozen breakfast sandwiches consisting of english muffin, egg white, and turkey sausage. At around 210 calories I might have one of those with a piece of fruit. Really easy to throw in the lunchbox before work.

    I eat two eggs a day, and have not had any cholesterol issues (I am lucky that I tend towards low cholesterol anyway).

    Typical breakfast for me is two hard boiled eggs and a half a sweet potato.
