WWYD? Activity level...

My activity level changes throughout the week. At work for three days a week, I am either sitting or riding in a vehicle (sedentary). When I am home for the other days, I am running around with my three kids so I am more active. Should I change my activity level depending on what I am doing or stay safe and keep it sedentary? I'm just afraid of not eating enough calories. Thoughts?
