Baked Honey Mustard Chicken

I just made this on a whim tonight and it was DELISH. The stuffing softens up and cooks using the honey mustard as the liquid and it makes a savory jelly-like topping for the chicken.

1 6oz chicken breast
2 tbsp honey mustard
0.5 cup Stove Top stuffing dry

1. Preheat oven to 350F
2. Spray large piece of aluminum foil with cooking spray
3. Slice chicken breast almost all the way through every 0.5inch or so down the breast
4. Place chicken breast in middle of aluminum foil
5. Sprinkle Stove Top stuffing on top of chicken
6. Drizzle honey mustard on top of chicken and stuffing
7. Fold aluminum foil to make a foil packet (picture below to demonstrate)
8. Bake foil packet for 35 minutes
9. ENJOY!

EDIT: Almost forgot! The whole thing was just 341 calories the way I made it. Low fat, high protein!
