Looking for some high protein low carb evening meal ideas please

Try this its fairly easy and tastes good:
Make a side of Ancient Harvest - Organic Harmony Tri-color Blend Quinoa
while that is cooking, cut up one green and one red bell pepper and dice them up
Dice up about 3/4 cup of red onion
Dice up 2 Jalapeno peppers
one tablespoon of minced garlic.
Place in a skillet with a table spoon of olive oil
start cooking on high heat,
then add two - four (depends on how many you are cooking for ) boneless and skinless chicken breasts
cook the chicken until the outside browns a little.
Add one small can of low sodium chicken broth,
Slice one container for baby portabella mushrooms and add to the mix.
Turn down the heat to medium and let cook for about 20 minutes
When you have about 5 minutes left take some frozen cut leaf or chopped spinach and microwave until done.
Serve by placing a bed of the Quinoa on the plate, then cover that with the spinach, then take out the chicken breast and place on the spinach. Now take the garnish that has been cooking along with the chicken and place that on top. This can be served with a steamed vegetable of your choice.0
