Is eating springrolls/rice wrappers *everyday* bad for health?

I don't like having to think of prepping something new for lunch everyday as i'm a student, so these past 2 months i've been making batches of fresh springrolls over and over, continuously. They're filled with a bunch of raw veggies (cucumber, carrot, cabbage, bell pepper, avocado to name a few) and a tiny bit of vermicelli. I always eat 2 for lunch with homemade sriracha/pb dipping sauce and usually a chorizo sausage entirely made from scratch by myself (i use spices and lean ground pork, it tastes great with the springroll).
It rounds up to a fair 400-430 calories lunch and it's a good carbup. I'm just starting to worry if eating so many rice wrappers everyday/week on top of my usual carbs (pasta/noodles, rice, bread, potatoes, bunch of fruits) would be way too much, and causes insulin problems/sugar drops/cravings for more carbs etc so im in fact making myself even hungrier, or just plain bad for my health to eat relatively nutritionally empty things like that too often ?
(I've noticed i've been craving sweets A LOT everyday since a month, which happened to be around the time my mom started bringing in birthday cake all the time around my, well, birthday, but i dont know if it also could be due to the ffact that carbs are piling up with all of these and leaving me ravenous for more?)
I'm kinda confused and it would be nice if anyone could help me figuring this out.

Off hand, provided you eat well balanced over all, such a lunch sounds lovely. I have yogurt and berries almost every morning for breakfast and don't worry about that!
Have you added your recipe to MFP? What does the macro break down look like?

No. I eat a lot of the same stuff, and I wouldn't consider your spring rolls to be empty calories.0

Yeah, I could say I eat pretty healthy. I don't eat out very often as i love my own cooking and eat pretty much of everything...i love all kinds of food, and i'm a veggies and fruits addict haha!
I don't log on mfp though, i use my own personal little notebook. It,s much easier for me. The only downside is that i dont track macros. I'll try to see how it looks next time, i don't really pay attention when i make them most of the time so i have no clue. i just know the calories for the wrappers/vermicelli/avocados for the entire recipe, and bam i divide it by how many rolls i made. Basic.0 -
