Hi  I've been craving kimchi for ages and came across some in the grocery store yesterday! Wicked stoked + might've done a happy kimchi dance lol I'm happy I found it, but would like to be able to make a more budget friendly version at home. Any recipes would be awesome. Thank you!

Maangji on YouTube has the best recipe. I've had friends who buy Kimchi from a Koreon market and they want mine instead. Kimchees are not created equally. It is time consuming but not difficult. Depending on where you live some ingredients will need to be purchased online. For instance the red chili powder . Not even in the same ballpark as ours. You can use the Indian version as well. If your going to do this grab a friend and make as much as you can afford. If kept properly it does not go bad, just gets better. And you'll find yourself getting request for it. I ferment lots of things and prefer glass or safe ceramic storage containers, but if you need to do large plastic buckets make sure they are food grade. Good luck
