Beets

I have almost 2 lbs of small beets to use up.
I already boiled and put a few in vinegar.
Any good ideas?
I have a spirilizer and a microwave steamer. ( and full kitchen access)

    Toast up some sliced baguette...top with arugula, goat cheese, beets, and some rock salt or kosher salt. GOOD stuff.

    I never seem to have the time to boil beets. But shredded beets cook really fast. I like them in salad too.

    kvass, borscht, beet salad, roasted beets w/ honey and thyme is one of my favorites

    I like them roasted...one of my favorite things is roasted beet and horseradish salad...kind of like a potato salad but with beets and creamy horseradish

    In the same vein..........in the crockpot for 3 - 4 hours.

    This. I then save my roasted beets so I can put them on salads and stuff. They last in your fridge about a week. Not sure how that would work if you froze them.
