You could use leftover chicken pieces and mix it in with rice and veggies and beans ( you don't have to use the chicken unless you want to ) I like it because its an easy, quick, cheap meal. Rice, whatever veggies you have on hand, and whatever beans you may have , makes a tasty dish. I make up a big pot and then I have several dinners and lunches for very cheap that taste very good. You can even season differently to change it up some. You could use Sazon, or any Goya seasoning you may have and it gives it some flavor.

Do you still get the same nutrients from leftovers

Sure. I pre weigh each ingredient, left over or fresh and then log each here on mfp. It will give you the macro breakdown and calories so you can divide up any extras and know the cals . it's fast, easy, and cheap but still tastes good. I make this once a week and eat the leftovers for several days.

You don't have to use chicken. I've done it with sausage, beef and ground turkey before. But I prefer no meat at all. Its a versatile dish, start with your rice, and veggies and then add on whatever you have available. Rice and veggies are so versatile, you can make endless creations for very cheap

I agree with this. You gotta be more specific. You can literally eat anything and it will be good for you in moderation. Are you looking for meals, snacks, breakfast, lunch, dinner? What do you like to eat? What don't you like to eat?

Get out of the mindset that chicken is the only thing "good for you." You'll get bored of this right quick, and that's when the trouble starts.

If you have chicken, you can bake it then shred and make different things so that you don't feel like you're eating plain old boring chicken each day. You can add salsa to shredded chicken for tacos, bbq sauce for shredded chicken sandwiches, make a quesadilla with 2% cheddar, chicken then top with light sour cream plus picante. White chicken chili - i'm sure you can find a recipe. It's basically a chili using chicken and great northern beans. Use the shredded chicken on a salad.

Other options - omelets are versatile. Pork tenderloin is easy; great protein. I usually buy the small ones. I brown in skillet then finish in oven. Slice for dinner. Leftover make a great sandwich.

I think trick is to experiment. Think outside the box. :)
