I've just started up again on MFP! Really hoping to lose weight and stay motivated. I need help finding easy, healthy recipes since I can't cook to save my life. Can anyone recommend healthy and easy-to-make recipes that also taste good?

Check out the Hungry Girl blog. There are a lot of fairly healthy recipes that require no more than a microwave or a forman grill to make.

Well one easy one that I recommend that is kind of hard to screw up. Oatmeal. It's great for breakfast and early day meals. Not the instant kind (unless that is your only choice). But steel cut, Irish, quick rolled, whatever you choose. Add water, nuke them for a minute or so (depending on your microwave and how liquidy you want them -- experiment). Add some sugar or honey or fruit or whatever. And you have a great meal. Oatmeal is one of the single best diet foods around. It is a slow burning carb meaning it provides fuel for your body for quite a few hours (so don't eat it late in the day). It is like no fat, can be made with endless different combination of ingredients, takes next to no time to fix. It is a staple of every competitive body builder in the world. There is a reason for that. And it is heart healthy. So I would certainly include oatmeal in any diet plan.

    FWIW.

I made this recently and it was SO yummy. Actually I've now made it twice in one week: http://www.skinnytaste.com/2012/03/easy-crust-less-spinach-and-feta-pie.html

And this is my go-to soup recipe: http://www.thekitchn.com/recipe-cuban-black-bean-soup-98048 Also easy and delicious. If you are veggie, leave out the ham hock and put in 1 tsp of smoked paprika.

Oatmeal is fairly simple (it can even be made in the microwave). Veggie salads are also very simple; it just depends on what veggies you like.

Soup, in my opinion, can be very simple. Some broth, and any leftover (or frozen) meat and/or veggies that you have.

There are some recipes here, on the recipe message board. Here are other sites that might be helpful.

Thank you I think you've just convinced me on oatmeal! I will go out and add it to my shopping list!
