Hey guys!

To get into the festivity of things, here are some amazing and (did I mention oh so delicious ;) healthy recipes! Here are some Breakfast, Lunch and Dinner ideas:

PUMPKIN PIE OATMEAL

INGREDIENTS
2 cups 1-minute oats
1¼ cup almond milk
¾ cup canned pumpkin
1 tablespoon light-brown sugar
2 teaspoon pumpkin pie spice
Pinch of salt
¼ cup butterscotch chips (optional)
¼ cup white chocolate chips (optional)
¼ cup chopped walnuts (optional)
Cool Whip Topping (optional)

Pumpkin Hummus

Ingredients
1 (15 ounce) can chickpeas
1 cup pumpkin puree
1/4 cup tahini
1/4 cup lemon juice (~1 lemon)
1 clove garlic
1/4 teaspoon ground cinnamon
salt, pepper and cayenne to taste

Pumpkin chili with black beans and garbanzo beans

Ingredients

1 tablespoon olive oil
1 large onion, chopped
4 garlic cloves, minced
1 cup pumpkin puree (from the can or homemade)
1 cup canned tomatoes
1 cup vegetable stock or water
1 can black beans (15 oz, 425 g)
1/2 can garbanzo beans (7.5 oz, 212 g) or white beans
1 tablespoon cumin powder (start with half the amount, and add more, to taste)
2 tablespoons chili powder (start with 1 tablespoon, reduce or add more, depending on your tastes and also on how spicy your chili powder is)
salt and pepper

    The chili looks awesome--Ive seen a couple of different recipes for both butternut squash chili and pumpkin. They are on my "must try list" Also want to do a pumpkin alfredo sauce over zucchini noodles--yum!
