Gluten and dairy free "Tops Alfredo"

this recipe is totes simple, all you need is a head of cauliflower, pot of boiling water, salt, garlic and a blender.
Ingredients:
1 head of cauliflower
1 cup of "cauliflower water" (just the water from which you boiled the cauliflower
2 cloves of garlic, minced (or 2 tsp pre-minced garlic)
Salt to taste
Chop cauliflower into manageable florets (chunks).
Put the cauliflower in the pot of boiling water, and cook until the cauliflower breaks up with a fork.
In the meantime, mince a couple cloves of garlic (or 2tsp of pre-minced garlic) put in the blender.
Save 1 cup of cauliflower water.
Put the cooked florets in the blender and add a touch of water.
Purée the combination, adding water as needed to cream the cauliflower.
While blending, add pinches of salt to taste.
Return to pot (empty) and simmer on low heat until ready to serve.
