Hi,
I'd love a good recipe for thick, rich, slower cooker chili. I prefer con carne, beans are fine with me, too, but any recipe that is your go-to would be appreciated.
Do you have one to share?

I just put on a chili this morning! I'd be happy to share my recipe. I usually wing it with my chili depending on what's in the fridge, but here's what it ended up being today. Serves 6 at 390 calories per serving. I really like kidney beans so I toss a lot in my chili, but it's easy to manipulate a chili recipe so get creative

5 1/2 cups mix of kidney beans and red beans
2 cups chopped sweet bell peppers
    1 large sweet onion, diced
5 jalapeños (omit if you don't want it spicy)
    2 cups chicken stock
14 oz trimmed and cubed strip steak
    1/4 cup tomato paste
2 cups diced tomatoes and juice
    3 tsp crushed garlic
    1/2 tsp salt
    1 tbsp. Chili powder
    1 tsp. Cumin
    1 tsp. Turmeric
    1-2 tbsp. Worcestershire sauce
    Black pepper to taste

It didn't end up fitting in my crock pot (mine is small, maybe yours is large) so I put it in my Dutch oven covered for 4 hours and then took the lid off for 2 hours to let it thicken up. I cooked my beans from dry so that's why I cooked it so long, and at about 260 degrees in the oven.

Here is mine. It is a Texas Style Chili so it is very thick with chunks of beef and no beans.

2.5 lb beef roast or stew meat
    4 cloves Garlic
4 cans (1 4/5 cups ea.) diced tomatoes
    1- 12oz can Tomato Paste
    1/3 c. Chili Powder
    1 Tbl dried oregano
    2 Tbl. Worchestershire Sauce
    1 lb yellow onions, chopped
    1/2 lb. green peppers, chopped
    1/2 lb celery stalks, chopped

Cut up beef into bite sized pieces. Dump everything into the crock pot and cook on low for 8-10 hours. If it is a little too thick, adjust liquids with a little extra beef broth if desired. If it is too soupy, add a little cornstarch mixed in cold water.
