An introduction from a new calorie counter, fitness mad Englishman

Hi all,
I joined MFP recently to better track my calories and hopefully figure out how to lose weight but not muscle. I'm a catering manager at the University of Cambridge, so providing yummy nutritious food for our students staff, fellows and guests is a large part of my job. I'm on the cusp of turning 50 and would really like to see my abs one last time. As such, I am working hard in the gym, eating healthy and driving my wife and teenage kids mad (why should they eat junk if Dad can't?!)
Unfortunately, my recent increase of protein via poultry, creotine, whey supplements and spinach has brought on a gout attack. Currently, I am lying on the couch in pain and feeling quite miserable with myself. Nevertheless, I will persevere and stay on track!
Looking forward to the abs and a swift recovery!
