Healthy Pancakes

Here is a recipe for healthy three ingredient pancakes-
1 banana
1 cup of oats
3/4 cup of egg whites

*canola oil or olive oil to coat the pan

Directions:
1. Mix first three ingredients in a blender until smooth
2. Heat a lightly oiled frying pan over medium heat (or use non stick with pam)
3. Pour the batter onto the pan using a 1/4 cup for each pancake.
4. Brown on both sides and serve hot.

I use fresh fruit as a topping- they are not too sweet. My kids put regular syrup and my husband uses sugar free syrup.

Tripling the recipe makes approximately 21 pancakes.

Enjoy!

This is my favourite pancake, protein pumpkin. Yay! Pumpkin spice to go along with the season. I usually have with fresh fruit and yogurt. I find it stays together better if I add a little flour.

Yum! I love banana pancakes. I don't put the oats in it though. Just a banana, an egg, and some egg white from the carton. I do occasionally make a more "traditional" protein pancake with oats, egg whites, and cottage cheese.
