With no sugar (honey would be ok) or white flour. (Basicly 100% whole grain.) My family LOVES sandwiches but I want to make them as healthy as possible.

    Just a note about the sugar in bread recipes. The sugar is needed by the yeast to grow. The longer you let the bread rise, the more sugar will be used up by the yeast.

    When I replaced the sugar with honey, my bread crust browned much faster.

    For Very Low Sugar bread, how about a sourdough? You keep the starter going with flour and water and it's naturally sour.

    Nothing is quite as good as white flour for the gluten, to make a nice springy loaf.

    You might try replacing some of the flour with oat flour for extra protein and richness.

    I have a pumpernickel recipe that uses molasses as the sugar for the yeast. It's a much denser loaf but I quite like it. It might be an adult loaf as it is so strong flavoured.

    If you try a 100% whole grain bread it is not going to be as light and springy.

    I swear by this recipe. The site is amazing for detailed explanation of ingredients, recipe, instructions. The larger loaf only uses 20 grams of honey, which is just over a gram per slice. I can get 16 slices from a loaf.
    I make the white bread recipe weekly, 2 loaves at a time.

    I agree with Ignata - some things are required for yeast to grow. Reducing salt effects rising also.

    I'va always wanted to try sourdough!
