My Red Beans salad: 65 calories per serving, loaded with fibers, Vit. C.

Buy the dry beans. Cans are a loaded with potassium. Dry red beans, just like black beans and chickpeas need a water bath of about 8 hours (either overnight) or leave them in the morning to cook when you come back home. Cook them in water that you bring to quick boil, then at medium heat it should take about 30 minutes (don't overcook).
A portion is about a cup. You can customize by adding fresh cherry tomatoes, fresh basil, carrots and so on.

1.00 cup, Arugula, raw
1.00 cup (dry) (3/4 cup cooked), Small Red Beans (Dry)
3.00 tbsp, Cilantro
0.50 pepper, Green Bell Pepper (Raw)
0.50 cup, Chopped
0.50 pepper, Red Bell Pepper, Raw
1.00 stalk, Celery Stalk

    It looks good to me, but one of the ingredients just says "chopped". Is one missing?

    Something is off in the nutrition information. Cooked red beans have about 225 calories and 13 grams of fiber per cup. The other vegetables have few calories, but also very little fiber in the amounts listed - like maybe 1 gram total. The math does not add up.
