Anyone have any good recipes for beets as a side dish for dinner. My kids and hubby only seem to like pickled beets. Over the years I have had beets at various restaurants served as a side dish but have no idea how to cook them.

    You can try to bake/fry them and make beet chips or get several different types of beats, cut them into medallions/slices and turn them into a colorful salad.

    Beetroot is delicious raw. I shredded some with jicama and red cabbage for a delicious red slaw a few days ago.

    In a dressing made with equal Parts lemon juice, maple syrup and olive oil, a little Dijon, salt and pepper. Crumble a little goat cheese and top spring mix with the beets and goat cheese. Drizzle on a little more dressing. It's the best salad in the entire world!

    I love beets either boiled or roasted. I cook them in the pressure cooker and they only take about 15 minutes. Then I dice them up and toss with balsamic vinegar. If your family only likes pickled...they will like these! That's how I like them as well!

    They take a looooong time to cook btw. If you boil them, I leave them whole and unpeeled (just scrub them and cut off the ends). Then once they are fork tender...strain them. The skins will then just slip off. They can be handled very similarly to potatoes but will take a lot longer to cook! Use a stainless pot so it doesn't turn magenta forever!

    Root Vegetable Bake

    300.00 g, Sweet Potato (1 large)
    400.00 g, Potatoes - Russet, flesh and skin, baked (2 medium)
    800.00 g, Rutabagas - Raw (1 large)
    750.00 g, Beet Root (3 to 4)
    6.00 , Carrots
    300.00 g, Onions
    2.00 tbsp, Butter - Salted
    2.00 tbsp, Coconut Oil
    1.00 tbsp, Spices - Salt, table
    2.00 tbsp, Thyme Seasoning

    Peel the rutabaga (waxed) and beets (skin). Cube cut all the veggies and place in a large baking dish. Melt oil and butter, then stir in seasoning. Drizzle over the veggies.

    Cover and cook in oven for 35-40 min at 325 degrees.

    Yum. I love roasted beets with rosemary, but this sounds fabulous!

    Hubs also makes a beet and apple salad.

    I do something similar, only I throw them in the steam cooker for about an hour. Love balsamic vinegar on beets!

    Pine nuts are a great addition to that salad.

    This is my favorite too. If you aren't big on goat cheese, roasted beets are also good as a salad with orange supremes and arugula.

    Simply boiled and served with butter.

    Raw beet juiced with carrot and apple.

    Raw shredded in a salad.

    Made into beet borscht with a ton of other vegetables.
