What should the macros for a low fat diet look like? Due to various gastrointestinal issues my body has issues breaking down fats and digesting them. Doctors have recommended a low fat diet which isn't that hard to follow since I eat mostly vegan. I do want to make sure I'm taking in enough fats and am wondering what the minimum or recommended breakdown should be for a low fat diet.

There are no set rules of low fat. There are some vegans that follow a raw plan which IIRC, it's 80/10/10 (carbs/fats/protein). Generally, I don't prefer to do macros by percentage but rather grams. This also depends on how many calories you are eating, what are your stats and what is your workout routine.

General recommendations for protein around .8-1g per lb of lean body mass (roughly .6-.8g per lb of mass) and fats around .35g per lb of lean body mass.

Also, do your body have issues with all fats (to include mono and polyunsaturate (found in nuts/avocado/oils)?

Isn't 80/10/10 a fruit heavy diet? That's the only whole food I can think of where you would even approach that macro ratio because protein would be 15-20 from most of the typically consumed vegetables.

medium chain triglycerides (coconuts are a rich source) are fats that are used by some who have digestion issues, but I would run anything by a Dr. and nutrition expert vs. taking advice here whatever you do.

It is fruit and veggie heavy.. I believe it's called raw vegan.

I went that route years ago....lost my Gall Bladder due to it! It's an all-around bad diet.
You would be best to eat a normal diet, but take an Enzymedica Digest Gold Capsule with
each meal. Whala - no more digestive issues!!! ;)
