Everyone who I know tried this recipe loves it, so I thought I better share it!
2 Ingredient Pancakes:
Mix/blend 1 ripe banana and 2 eggs. Cook like you would make "normal" pancakes.
Makes about 8 silver dollar sized pancakes, about 31 calories each. (~245 calories in the batch!)
No syrup necessary. You can also add berries, vanilla, even PB2, if you want them to have a different taste. My kids like it with blueberries. I eat a stack of 6, as they are thinner than flour pancakes, with no syrup and a bit of natural peanut butter somewhere in the pile.0
