southwestern chopped chicken salad

Good morning! I found this recipe on the wonderful creation called Pinterest. It is a southwestern chopped chicken salad that is absolutely delicious! So delicious that I had to share.

Salad:
2 cups cooked chicken, chopped
1 can black beans, drained and rinsed
1 can corn, drained
2 Roma tomatoes, diced
1/2 red onion, diced
1 bell pepper, diced
1 head iceberg lettuce, chopped
1/4 cup cilantro, chopped
Juice of half a lime

Dressing:
1/2 cup mayonnaise
2/3 cup Greek yogurt
1 tbsp ranch seasoning
1 tbsp taco seasoning


Its so simple, just chop and mix all ingredients. I made the dressing and left it separate so that I can add as much or as little as I want. I added all ingredients to the site's recipe builder and I believe its around 450 calories a serving if divided into 5 servings. I'm gonna be having it everyday this week for lunch <3

I did make some changes from the original recipe. I left out tortilla chips and avocado. Here is the link to the original:

    We do something similar

    Chopped cooked chicken (really easy to shred a store rotisserie chicken)
    Can of black beans rinsed
    Can of corn, drained
    diced onion
    diced jalapenos
    diced peppers
    diced tomatoes
    lime peel
    Season with some salt
    juice from a lot of limes
    chili powder
    cumin
    cayenne pepper
    Diced avacado

    We eat it as a chip dip, on top of lettuce for a salad topping, or as a burrito/taco filler.

    Yummy.
