Just made this over the weekend, delish! This serves 2

100g Roasted Sugar Pumpkin
4 Large Eggs + 1 Yolk
400g Tipo "00" flour
40g Semolina flour
7g sea salt
140g unsalted butter
fresh rosemary
Fresh nutmeg

Make pasta dough as usual but mix one of the eggs with the roasted pumpkin so that it can be incorporated easily.
Rest dough for at least 30 min
Roll out and cut into desired shape
Boil pasta just until it floats
Finish in sage and brown butter sauce
