How do you calculate the nutritional info when making broth from a turkey or chicken carcass?

I always end up choosing a good quality organic broth from the database because I've never been able to figure it out. I'm sure my bone broth has more protein, a lot less sodium, and possibly a few more calories, but (as long as I was tracking at all), the fake didn't seem to affect the end result: I lost weight and stayed healthy.0

I log a no-sodium store-bought stock. It's impossible to know the exact amount of calories in your own.
There are so few calories in this stuff that it hardly matters, anyway.0
