Honey Oatmeal Peanut Butter Balls (with Chocolate Chips)

Here's a super easy and delicious snack that I sometimes make up, and figured I'd share with you fine MFP'ers.

INGREDIENTS:

½ Cup Whipped Peanut (or Almond) Butter 1200c
2 Tsp Vanilla Extract 24c
⅓ Cup Honey 320c
1 Cup Old Fashioned Oats 300c
¼ Cup Almonds (Chopped) 133c
45 Grams Dark Chocolate Chips (Dried Fruit or Chopped Nuts) 240c
Pinch Sea Salt n/a
Pinch Ground Cinnamon n/a
2217c total

Makes 14 servings | 158c each (appx)


DIRECTIONS:

1) Combine peanut butter, vanilla extract and honey
2) Add in other ingredients and stir together
3) Refrigerate for 30 minutes
4) Take out and roll into 14 ping pong sized balls
5) Refrigerate in airtight containers

These are amazing right after, but even better after they sit in the fridge overnight. I don't make these that often, and when I do I try to share them with others to help avoid them temptation of eating more than one or two a day.

    Yeah I somehow thought if I put the rest of these in my freezer it would keep me from eating them because they'd be hard and have to thaw. WRONG. They were chewy and delicious. DANGER DANGER. So good!

    Ha. That's awesome. I'm glad you guys enjoyed them. Luckily when I do make these, I usually have Elle and Holley to help me portion control. And I did send Katrina the recipe for these this morning.

    Though, I still feel kinda bad for bringing cauliflower to a cookout.
