Chicken & Dumplings (Crockpot/Slow Cooker)
Chicken
Cream of Chicken (2 cans)
Whatever Veggies tickle your fancy (Carrots, greenbeans, corn, etc)
1 package of refrigerated biscuits.
Put everything in the crockpot except the biscuits. Cook on high or low depending on when you want it done. About 45 minutes before you're ready to serve add in the biscuits (I tear them into quarters).
Bam done. Soooooo good.0 -
-Dip them in melted butter with minced garlic in it
-Then dredge lightly in bread crumbs (pour any leftover butter/garlic on top to help browning)
-Bake

I second the Coq au Vin. My husband makes it in the slow cooker and it is so dang good! There are a ton of recipes and variations all over the internet.0 -
Haven't read the thread so sorry if I'm being repetitious.
I cut chicken thighs into chunks and sautee with Taco seasoning for grilled chicken tacos.

Owing to an internet order *kitten*-up (OK fat fingers mistyped 1 as 4) I now have significantly more packs of 8 chicken thighs than I was expecting
I have made chicken cacciatore, yes at 6am, and oven baked tikka chicken thighs on a bed of onions is next

There is only 1 rule - NO FRUIT PLEASE... I am of the strong opinion that fruit in main courses is the work of the debil
I find it funny that the censoring made it seem like a worse word than it was. Also, not being able to talk about c ocks in a thread on chicken. It feels like the the swear censoring function has you a little henpecked. Hopefully you'll find the recipe that leaves you feeling the *kitten*-of-the-walk.0 -

There is only 1 rule - NO FRUIT PLEASE... I am of the strong opinion that fruit in main courses is the work of the debil
Step one: Acquire some Sweet Baby Rays BBQ sauce.
Step two: boil the thighs until cooked through, but just barely
Step three: plop thighs into a 9x13, smother with sauce, broil on high until sauce is just becoming partially charred at the edges of the meat.
Step four: log log log.
When I did this with chicken legs, I had 3 legs, weighed with a digital food scale (obviously just the meat taken off the bone, as well as the sauce) and that only ended up being 222 calories not including the broccoli I made for 3 ounces. Sweet Baby Rays BBQ sauce is only 70 cal per TWO tbsps, which seems like a lot until you realize that you're only really getting like 1 tbsp per 1.5 ounces of chicken anyway (when I weighed my 3 oz of chicken with the sauce, the sauce ended up being almost exactly 2 tbsp worth of grams, I forget the number because I added it to MFP as tbsp's cause it was so close) Throw in a low calorie side like broccoli or even corn (not so low, but you don't have to eat much with corn, it's so satisfying) to make a homey feeling bbq minus the grill!0 -

dice the chicken thighs and buy some vegetables on the cheap and make a low-cal stew

marinate w terriyaki sauce, garlic, & ginger then pan fry, grill or bake. serve with rice.0

I invented this one:
In a large Baggie:
1/4 cup olive oil
1/4 cup water
2 tblsp Dijon country mustard
Juice of 1 lime
1 tblsp tomato paste
Tsp sriracha (or more if you like it hot)
Salt/pepper
1 medium chopped onion
3 cloves finely chopped garlic
Mush everything in Baggie till well blended.
Add 10-12 chicken thighs (or other chicken parts)
and mix everything well. Refrigerate for at least 3 hours or overnight. Plop it all in a baking pan and bake at 325' for 1 hour or until done.
This recipe is absolutely delicious if I must say so myself and everyone I've served it to loves it.

chicken noodle soup! Boil the chicken, remove when done and add whatever veggies you like to the pot and cook while you debone the thighs. Add some noodles and, poof, awesome soup.0
