I am having trouble eating more than 1200 calories on a vegetarian diet. tips? I am really picky and am not scared of carbs

Do you do dairy? I could easily do 1200 in cheese! lol
Nuts, cereals, potatoes, corn...
I'd hate to tell you to eat junk food.
I've never ever ever had trouble getting enough calories, so that's the best I've got to offer. lol0 -
You shouldn't have any problem if you eat dairy/eggs/nuts/olive oil. For example, a cup of regular cottage cheese is about 220 calories with 23 or so grams of protein.0

Whole egg omelettes with veggies and maybe cheese, wraps made with beans or hummus and roasted veg, dinners of tofu/beans/tempeh plus sauce and grains, and snacks. I think you can easily make 1200!0

Nuts, pasta, some extra butter added to the veggies...possibilities are endless.0

Ice cream, peanut butter (nutt butters really), nuts, avocado, cheese, oils, or supplement with a protein shake if you have to.0 -
