Spiralizer Ideas?

I am a new owner of a spiralizer. Tonight I made decadent carbonara with half of the spaghetti replaced with spiralized courgettes (zucchini). Was happy with the result. I "blanched" the spiralized veg for 2 minutes in the microwave before tossing in the sauce with the pasta. I guess I will next try other pasta sauces with a half and half mix of pasta and spiralized vegetable such as homemade pesto and puttanesca.

Please post spiralizer recipes and ideas. Has anyone had success spiralizing really hard veg like parsnip or squash?

I am also tempted to try a not so healthy option of vegetable tempura with spiralized carrots and courgette mixed with thinly sliced onion which is akin to something I remember eating at a restaurant.

    personally I love them as a replacement for pad thai noodles and also as pasta in several Italian dishes that I make.

    Thanks. What veg do you use to substitute Pad Thai noodles and do you replace all the noodles or only a proportion.

    Personally I love zucchini noodles and I use only those. I stir-fry either tofu or chicken, a little scrambled egg, sometimes a few shredded carrots, and then add the zucchini noodles at the end because I don't like them overcooked. I top with bean sprouts and a lime wedge and a sprinkling of PB2.

    For pasta replacement, I use all zucchini noodles and just pan fry them quickly and add my homemade turkey meat sauce or whatever sauce I feel like.

    I also spiralize sweet potatoes and bake them till crispy in the oven and use them to top salads but have not done any stir fries or noodle replacements with those...

    I once tried spiralizing radish (daikon). It was gross. But I also don't like radishes. Carrots work well. I tried sweet potato once, but then overcooked it so it just turned into mashed sweet potatoes. :s

    My favorite spiralized dish is cold peanut/sesame noodles with spiralized zucchini. Really good and doesn't require any cooking. Just use any peanut/sesame noodle sauce recipe online and let it sit with the spiralized noodles for a bit. Very tasty on hot days.

    Spirialize zucchinni, yellow squash (partially pealed) and cuccumber, thinly slice an onion, mix together with salad dressing of your choice. makes a good salad.

    Thanks guys. Will definitely try the cucumber and satay sauce salad.

    That sounds good but there is different stuff in the picture. Is that carrot and some kind of meat? What else goes into it?
    And holy cow - a HALF CUP of peanut butter? Do you know the calories per serving? (Sorry - I'm being lazy or could do it myself. lol)
