Planes, Trains and Automobiles: (for people who are trying to lose weight despite traveling a lot)

Folks,
I have found the enemy and it is hotel food! I have been traveling 5-8 days per week for work for the past two years and I am having a lot of trouble maintaining progress. Typically, I do well with eating and exercise on the days when I'm not traveling. Then, I go on a business trip for 4-5 days at a time, and even though I make the best choices I can, I still gain weight on the trips.
My ideal trip:
Stay at the hotel that has that great egg white frittata on the breakfast menu and also some healthy room service options
Come back to the hotel every night right after work, get to bed on time
Wake up to work out before work the next day
Make good food choices all day
My real trip:
Sometimes I get that hotel, at other times I have to stay at hotels without great room service menus.
When I get to order my own lunch, I make good choices, but I am increasingly in lunchtime working sessions where lunch has been pre-ordered for me and is a sandwich tray or something else I would not have chosen
When I get to order my own dinner, I make good choices, but I am increasingly having to go to work dinners, sometimes without a la carte ordering because a special menu may have been ordered for my party
I am increasingly working late into the night during these trips (since I have meetings all day, I need the time after hours to catch up on e-mails and whatever has come in during the course of the day), cutting it so close that I may have to choose between getting more than 6 hours of sleep and working out in the morning. I usually choose sleep, partially because I fly the red-eye and am playing catch-up.
So, if you travel a lot, I want to know: how do you keep losing weight even with so much variance in your schedule?

I don't travel a lot for work, but for those lunches that are brought in you can tell the host/admin that you are on a special diet and here is what you need/want for lunch.0
