I'm having a little test run on some recipes, whilst watching the NFL International Series game in London.

Thought I'd share a few of what I'm trying out. Feel free to share your own healthy treats.

    Italian Sausage Mushroom Cups

    For the Italian Sausage Mushroom Cap

    12 mushroom caps, cleaned and stems removed (try to find small, bite size caps)
    ¾ pound italian sausage
    Cheese of choice

    Preheat oven to 350 degrees.
    Remove stems from mushroom caps. With the ¾ pound italian sausage, use a cookie scoop or spoon to scoop about a tablespoon and shape into meatballs.

    Place meatball into the mushroom caps. Using the tip of a knife, push the tip into the top of the meatball, swirl around to create a whole, then place a small amount of cheese into the top. Repeat with all mushrooms.

    Place mushrooms on a baking sheet and into the oven for 15-20 minutes or until meat has cooked through.

    I like to make my own Italian Sausage Meat.

    1 teaspoon ground black pepper
    1 teaspoon dried parsley
    1 teaspoon dried Italian herbs
    1/2 teaspoon garlic granules
    1/8 teaspoon crushed chillies
    3/4 teaspoon crushed anise seeds
    1/2 teaspoon paprika
    1/2 teaspoon dried onion flakes
    2 teaspoons salt
    900g minced pork

    Is there something missing from that recipe ? It looks like there is sauce on the meatballs, but no mention of it in the recipe.
