Does anyone know a butter substitute for baking? I use Country Crock Light 35 calorie, but I was seeing if there was anything lower. What about flour? I have Bob's Red Mill Coconut Flour. Just hate the calories being high.

Pies and cakes pretty much but I like very low calorie. Wish I could eat a whole pie without the guilt and a can of frosting0

You can usually substitute any margarine (light or regular) for butter in pretty much any baking recipe, unless it specifically says "no substitutions." I know my snickerdoodle recipe is a no substitute for butter. As far as flour goes, you really can't substitute the whole thing. If it calls for 1 cup of all purpose flour, you can do like 3/4 c AP flour and 1/4 c of a flour of your choice (soy, almond, etc). But they don't sub fully.0

It is hard to cut the calories on the frosting if you are committed to a certain taste and texture.
It is easier to reduce the calories in the cake or the pie:
You can make cake using applesauce or yogurt instead of the oil.
You reduce the sugar. You can make a pie with no crust.
Here are some ideas for the frosting:

Don't use margerines. Use real butter!0

Unfortunately "lower calorie" baked goods usually taste bad, and are only slightly less unhealthy. Therefore they are kind of pointless IMHO.
It doesn't make sense to me to eat something that doesn't taste very good if it's only slightly less unhealthy than the full fat version.0 -

"Light" butter substitutes have quite a bit of added water. That's okay for batter type goods.....but ruins the texture for cookies and just about anything crispy or chewy.
I've had good success with using applesauce in place of oil for cakes & muffins. Yogurt & pumpkin puree works too.
I've never tried to replace flour with anything lower calorie. I like grinding oats to make oat flour. That's not to lower calories, but just gives a different flavor and besides oats are so good for you.
Re: frosting. I like streusel toppings (nuts, brown sugar, cinnamon) and drizzle on some glaze. A bit lower calorie.....but you get rid of fat and can always reduce the streusel amount.
Instead of coconut pecan frosting....I like a broiled coconut topping. Again, not a whole lot less calories overall. Nice toasty flavor.
Look for 7 Minute Fluffy Frosting. This is egg whites & sugar cooked over boiling water. Nice, fluffy, and zero fat.
Jello Frosting is similar: www.happierthanapiginmud.blogspot.com/2012/01/jello-frosting.html0 -

I totally agree.

Just wish they could create a way to have the so called "unhealthy" but tasty foods as low calorie as possible and not feel guilty. It's just a fantasy I have to live without. I even hate small portions of things I love but I have to deal with it in order to keep the figure that took me months to get. Stopped eating those good foods to get it and turned to boring foods. (Don't get me wrong I love fruits, vegetables and meat) just hate living off numbers that control our bodies. It's ridiculous.0

There is no decent substitute for butter in baking, especially tarts and the like. That country crock stuff makes me shudder. Real flour has a lot lower calories than that coconut stuff you are using.
I can replace nearly all the fat in muffins and breads with apple sauce and maybe a tablespoon of oil.
If you are obsessed with high-volume baked treats, try the puffed squares, like puffed wheat. Use the real recipe.
I would prefer a tiny slice of heaven than the fake stuff you are trying to make.
